Our Head Chef

Matthew Briddon comes with over 10 years’ experience in some of the top UK kitchens.

He trained at River Cafe and then honed his skills working as sous chef for the Michelin starred Heathcotes Restaurant. He was quickly promoted to Head chef where he ran the kitchen of this busy award winning restaurant.

Matthew then took on the challenge turning The Tavern on the Bay in Anglesey into an award winning destination restaurant which gained notoriety on Channel 4’s Sunday Brunch in August 2013.

Matt says “I am using the hotel’s kitchen garden to grow and much as possible and we now have two rare breed pigs in the 2 acre paddock. We also have our own smokery which we use for hay smoked salmon. The Moonraker is a dream job given the amount we grown here onsite. We now have rare breed chicken Gloucester Old Spot pigs in the paddock

I offer what we are call farmhouse dining, using local ingredients to showcase some old fashioned classics.”
